On the topic of closing bottles
Why Stelvin + screw caps? For us, Stelvin is the technically most sound alternative - a 100% liquid-tight seal, minimally air-permeable, the inner coating is not made of silicon but a special metal alloy and the wines need less sulphur, which makes them more agreeable. But the most important reason - the wine can't cork anymore!
We are no longer willing to have our hard work in the vineyards and cellars spoilt by the final step, a little bit of cork. We have no problem with a real cork flavour - 99 % of all consumers can clearly discern it. The biggest problem is the so-called "creeping" cork taint, which is recognized only rarely. Everything is blamed on the producer. The wine has only a dull fruit note and doesn't seem balanced - a negative impression and the wine is not consumed any longer.
Wine today represents life style, pleasure and enjoyment, as does most food. Do you know any food of the 21st century that is sealed with a (possibly) moldy bark?
